Winter Kale Soup, tweaked...

So I added a few more ingredients to my soup tonight. I added about 5 small russet potatoes, cut up, and about 4 cups of mushrooms. It looks so yummy!!!

Recipes

This recipe is one that I love to take to families when they are in need of a meal. It is so tasty and nutritious, and super simple to make.

Chicken Cassoulet

2 cans beans, (white, navy, black, etc.)

4 boneless chicken breast

2 T olive oil

1 2/3 c chicken stock

1 med onion, choppped

4 celery stalks, chopped

4 garlic cloves, pressed through a garlic press

1/4 c sundried tomatoes (not packed in oil)

3 large carrots, thinly sliced

1/4 c fresh basil, chopped fine

1 tsp thyme

2 T minced parsley

Spread half of beans in the bottom of your slow-cooker, I use a dutch oven. Season chicken, heat oil over med-high in skillet, brown chicken on both sides for about 5 min each. Placed browned chicken over the beans in the cooker. Top the chicken with remaining beans then pour in the stock.

Saute the onions, celery, garlic, tomatoes, carrots, and herbs using the same skillet. Spread over the chicken and beans. Cover and and slow cook for several hours, until the chicken falls apart with a fork.

Serve with corn bread...oh so yummy.
